  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • pinch of salt and pepper
  • tomato sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F and lightly coat a baking sheet with olive oil or non-stick spray.
  2. Grate the zucchini using a box grater and wring out excess moisture with a clean towel.
  3. Grate the garlic until finely minced.
  4. In a mixing bowl, combine the shredded zucchini, grated garlic, egg, breadcrumbs, cheese, chopped herbs, salt, and pepper. Mix well.
  5. Shape about one tablespoon of the mixture into small balls and place them on the prepared baking sheet.
  6. Bake for 15-18 minutes until golden brown. Serve warm with marinara sauce.
