  • 2 tbsp olive oil
  • 2 apples (peeled and roughly chopped)
  • 1 white onion (peeled & roughly diced)
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 1/2 cups chicken broth
  • 3/4 cup half & half
  • 2 cans cannellini beans (drained)
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Sauté apples and onions in olive oil over medium heat for 6-8 minutes until softened. Stir in chili powder and cumin.
  2. In the same pot, melt butter over medium-low heat, whisk in flour, and cook for about 60 seconds.
  3. Gradually add chicken broth while whisking until smooth. Then whisk in half & half and simmer until thickened (3-5 minutes).
  4. Stir in chicken, beans, and sautéed apple/onion mixture until well combined.
  5. Adjust consistency with broth if needed, then mix in shredded cheese until melted.
  6. Serve hot with your choice of toppings.
