- 1 kg beef (chuck or stewing beef), cut into chunks
- 3 red bell peppers, deseeded
- 3 scotch bonnet peppers (adjust to taste)
- 1 medium onion
- 400 g canned tomatoes
- 1 cup vegetable oil
- 3 tsp chicken bouillon powder
- 1 tsp salt
- Optional: 1/2 tsp curry powder, 1 tsp oregano, 1/2 tsp thyme
Instructions
- In a large pot, season the beef with salt and chicken bouillon powder, adding some chopped onions. Cover with water and boil until tender. Reserve some broth and set aside the cooked beef.
- Blend the red bell peppers, scotch bonnet peppers, canned tomatoes, and onion until smooth.
- Heat vegetable oil in a large pot over medium-high heat. Add the blended mixture and fry for about 15–20 minutes until thickened.
- Stir in the cooked beef and reserved broth. Add optional spices if desired and let simmer for another 15–20 minutes.
- Taste and adjust seasoning as needed before serving hot over rice or yams.
