  • 1 3/4 cups (220g) all-purpose plain flour
  • 1 cup (200g) granulated sugar
  • 2 1/4 teaspoons baking powder
  • 1/8 teaspoon salt (if using unsalted butter)
  • 3/4 cup (190g) dairy-free milk (room temperature)
  • 1/4 cup (55g) neutral flavored oil
  • 1/4 cup (55g) melted vegan butter (and cooled or extra oil)
  • 1 teaspoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare your round cake pan by lining it with parchment paper and greasing it well.
  2. In a saucepan over low heat, melt the vegan butter, then stir in the light brown sugar, maple syrup, ground cinnamon, and salt until combined. Pour this mixture into the prepared pan and sprinkle chopped pecans on top.
  3. In a mixing bowl, combine all-purpose flour, granulated sugar, baking powder, and salt. In another bowl, whisk together dairy-free milk, neutral oil, melted vegan butter, apple cider vinegar (if using), and vanilla extract until smooth.
  4. Gradually mix wet ingredients into dry until just combined. Pour batter over pecan topping and bake for about 50 minutes or until a toothpick comes out clean.
