  • ¼ tsp nutmeg
  • ½ cup butter (softened)
  • 1 cup brown sugar
  • 1 egg
  • ½ cup butter (for sauce)
  • 1 cup granulated sugar
  • ½ cup heavy cream
  • Extra apple juice (for serving)

Instructions

  1. In a large mixing bowl, combine sultanas, prunes, candied citrus peel, glace fruit mix, and halved glace cherries. Add grated apple and carrot along with orange zest and juice plus apple juice. Mix well; cover and let sit for at least an hour.
  2. Prepare your pudding basin by greasing it and placing parchment paper at the bottom.
  3. Whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, cloves, and nutmeg in a separate bowl.
  4. In another bowl, cream together softened butter and brown sugar until crumbly. Add egg; continue mixing until smooth. Fold in the fruit mixture.
  5. Gradually add dry ingredients to the wet mixture until combined.
  6. Spoon batter into the prepared basin; cover securely with parchment paper followed by foil.
  7. Steam for about 3½ to 4 hours until cooked through (check temperature reaches about 200°F).
  8. For the sauce: Melt butter in a saucepan over medium heat; whisk in granulated sugar until gritty then add heavy cream. Stir until boiling; remove from heat and stir in additional apple juice.
