Ingredients
- 35 chocolate creme cookies
- 5 tbsp unsalted butter, melted
- 24 oz full-fat cream cheese, room temperature
- 8 oz mascarpone cheese, room temperature
- 1 ½ cups granulated sugar
- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs, room temperature
- ½ cup heavy cream
- 1 cup sour cream
- 1 tbsp cornstarch, sifted
- 12 ladyfinger biscuits
- ½ cup strong black coffee
- 4 oz mascarpone cheese, cold
- 2–4 tbsp granulated sugar
- 1 tsp instant coffee dissolved in 1 tsp water
- 1 cup heavy whipping cream, chilled
- 2 tbsp cocoa powder, to dust
Instructions
- Preheat the oven to 350°F (175°C) and butter the base of a springform pan.
- In a food processor, grind chocolate cookies with melted butter until fine crumbs form. Press into the bottom of the pan and bake for 7–8 minutes.
- Beat cream cheese, mascarpone, sugar, vanilla essence, and salt until smooth. Mix in eggs one at a time, then add heavy cream and sour cream; blend until just incorporated.
- Pour half of the cheesecake batter over the cooled crust. Dip ladyfingers in coffee quickly and layer them over the batter. Pour remaining batter on top.
- Bake in a water bath at 320°F (160°C) for about 80 minutes or until edges are firm but center jiggles slightly.
- Cool at room temperature for 15 minutes before refrigerating overnight.
- For topping: Whisk cold mascarpone with sugar and dissolved coffee; fold in chilled whipping cream until stiff peaks form.
- Spread topping on cooled cheesecake and dust with cocoa powder before serving.
