  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter, melted
  • 24 oz full-fat cream cheese, room temperature
  • 8 oz mascarpone cheese, room temperature
  • 1 ½ cups granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs, room temperature
  • ½ cup heavy cream
  • 1 cup sour cream
  • 1 tbsp cornstarch, sifted
  • 12 ladyfinger biscuits
  • ½ cup strong black coffee
  • 4 oz mascarpone cheese, cold
  • 24 tbsp granulated sugar
  • 1 tsp instant coffee dissolved in 1 tsp water
  • 1 cup heavy whipping cream, chilled
  • 2 tbsp cocoa powder, to dust

Instructions

  1. Preheat the oven to 350°F (175°C) and butter the base of a springform pan.
  2. In a food processor, grind chocolate cookies with melted butter until fine crumbs form. Press into the bottom of the pan and bake for 7–8 minutes.
  3. Beat cream cheese, mascarpone, sugar, vanilla essence, and salt until smooth. Mix in eggs one at a time, then add heavy cream and sour cream; blend until just incorporated.
  4. Pour half of the cheesecake batter over the cooled crust. Dip ladyfingers in coffee quickly and layer them over the batter. Pour remaining batter on top.
  5. Bake in a water bath at 320°F (160°C) for about 80 minutes or until edges are firm but center jiggles slightly.
  6. Cool at room temperature for 15 minutes before refrigerating overnight.
  7. For topping: Whisk cold mascarpone with sugar and dissolved coffee; fold in chilled whipping cream until stiff peaks form.
  8. Spread topping on cooled cheesecake and dust with cocoa powder before serving.
