  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 pineapple (chopped)
  • 2 cups purple grapes (halved)
  • 2 cups green grapes (halved)
  • 1 pound strawberries (hulled and quartered)
  • 5 kiwi (peeled and quartered)
  • 2 large mangos (chopped)
  • 10 ounces blueberries
  • 6 ounces raspberries (optional)
  • 2 cans mandarin oranges (drained)

Instructions

  1. In a large mixing bowl, combine apricot preserves, granulated sugar, lemon zest, and lemon juice. Mix until well blended.
  2. Chop the pineapple into small pieces and add it to the bowl.
  3. Halve the purple and green grapes before adding them to the mixture.
  4. Hull the strawberries and cut them into quarters before mixing in.
  5. Peel and chop the kiwi into quarters; add to the salad.
  6. Slice the mangos close to the pit and scoop out chunks; incorporate into the bowl along with blueberries.
  7. If desired, gently fold in raspberries and drained mandarin oranges.
  8. Serve immediately or chill in the refrigerator for about 30 minutes before serving.
