- 2 cups purple grapes (halved)
- 2 cups green grapes (halved)
- 1 pound strawberries (hulled and quartered)
- 5 kiwi (peeled and quartered)
- 2 large mangos (chopped)
- 10 ounces blueberries
- 6 ounces raspberries (optional)
- 2 cans mandarin oranges (drained)
Instructions
- In a large mixing bowl, combine apricot preserves, granulated sugar, lemon zest, and lemon juice. Mix until well blended.
- Chop the pineapple into small pieces and add it to the bowl.
- Halve the purple and green grapes before adding them to the mixture.
- Hull the strawberries and cut them into quarters before mixing in.
- Peel and chop the kiwi into quarters; add to the salad.
- Slice the mangos close to the pit and scoop out chunks; incorporate into the bowl along with blueberries.
