  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cayenne pepper
  • 1.5 tablespoons minced garlic
  • 2 tablespoons fish sauce
  • 2.5 teaspoons sweet soy sauce
  • 2.5 teaspoons sugar
  • 1/4 teaspoon white pepper
  • 1/3 cup coconut milk
  • 1/2 cup creamy peanut butter
  • 3/4 cup coconut milk (for sauce)
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons ground peanut
  • Salt to taste

Instructions

  1. Slice chicken into 1-inch wide strips.
  2. In a bowl, mix marinade ingredients: curry paste, turmeric, coriander, cayenne pepper, garlic, fish sauce, sweet soy sauce, sugar, white pepper, and coconut milk. Add chicken and coat well. Refrigerate for at least 30 minutes.
  3. For the peanut sauce: Combine all ingredients in a saucepan over low heat and whisk until smooth and heated through.
  4. Preheat grill to medium heat. Thread marinated chicken onto skewers and grill for about 4 minutes on each side until cooked through.
  5. Serve hot with the peanut sauce and fresh cucumber slices.
