  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into cubes)
  • 1 medium white onion (chopped)
  • 3 jalapeño peppers (chopped)
  • 2 cups beef stock
  • 2 tablespoons olive oil
  • 4 cloves garlic (chopped)
  • Salt and pepper to taste

Instructions

  1. Prepare chili paste by toasting the dried peppers in a dry pan, soaking them in hot water until soft, then blending with salt and some soaking water until smooth.
  2. Season cubed beef with cumin, salt, and pepper; sear in a large pot until browned.
  3. Sauté chopped onions and jalapeños in the same pot until softened; add garlic and cook briefly.
  4. Combine seared beef and chili paste in the pot; add beef stock and water; bring to boil.
  5. Reduce heat and simmer covered for about 2 hours or until beef is very tender.
