  • 6 bell peppers
  • 1 onion, diced
  • 1 lb lean ground beef or turkey
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 2 cups cooked brown rice
  • 1 taco seasoning packet
  • 1 ½ cup shredded cheddar jack cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the bell peppers in half and remove seeds.
  3. Place peppers in a baking dish and drizzle with olive oil; bake for 5 minutes.
  4. In a large skillet, sauté diced onion with olive oil and seasonings until soft.
  5. Add ground beef or turkey; cook until browned.
  6. Stir in diced tomatoes, black beans, corn, brown rice, and taco seasoning; mix well.
  7. Fill each pepper half generously with the mixture.
  8. Cover with foil and bake for 10 minutes.
  9. Remove foil, add cheese on top of each pepper, and bake uncovered for an additional 15 minutes.
