  • 1 medium spaghetti squash
  • 4 tsp olive oil (divided)
  • 2 cloves garlic
  • 1/2 lb ground beef
  • 1/2 cup marinara sauce
  • 2/3 cup ricotta cheese
  • 1/3 cup grated parmesan cheese
  • 2/3 cup mozzarella cheese (shredded)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, drizzle with 2 tsp olive oil, and sprinkle with sea salt. Place cut-side down on a baking sheet.
  3. Roast in the oven for 30–35 minutes until tender.
  4. In a skillet over medium heat, add 1 tbsp olive oil and sauté minced garlic until fragrant. Add ground beef, sea salt, and black pepper; cook until browned.
  5. Stir in marinara sauce and Italian seasoning; simmer for about 5 minutes.
  6. In a mixing bowl, combine ricotta cheese, grated parmesan cheese, and a pinch of sea salt.
  7. Once the squash is done, flip it over and scrape out some strands. Mix them with the beef filling and ricotta mixture. Top with shredded mozzarella cheese.
  8. Return to the oven for another 10–15 minutes until the cheese is bubbly and golden brown.
