Ingredients
- 1 medium spaghetti squash
- 4 tsp olive oil (divided)
- 2 cloves garlic
- 1/2 lb ground beef
- 1/2 cup marinara sauce
- 2/3 cup ricotta cheese
- 1/3 cup grated parmesan cheese
- 2/3 cup mozzarella cheese (shredded)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise, scoop out the seeds, drizzle with 2 tsp olive oil, and sprinkle with sea salt. Place cut-side down on a baking sheet.
- Roast in the oven for 30–35 minutes until tender.
- In a skillet over medium heat, add 1 tbsp olive oil and sauté minced garlic until fragrant. Add ground beef, sea salt, and black pepper; cook until browned.
- Stir in marinara sauce and Italian seasoning; simmer for about 5 minutes.
- In a mixing bowl, combine ricotta cheese, grated parmesan cheese, and a pinch of sea salt.
- Once the squash is done, flip it over and scrape out some strands. Mix them with the beef filling and ricotta mixture. Top with shredded mozzarella cheese.
- Return to the oven for another 10–15 minutes until the cheese is bubbly and golden brown.
