Ingredients
- 2 tbsp oil
- 1 ½ cups dried white kidney beans
- 1 ½ cups dried Romano beans
- 4 smoked chicken sausages, chopped
- 2 onions, finely diced
- 2 carrots, shredded or diced
- 1 dried bay leaf
- 2 ½ tsp salt (or to taste)
- 4 cloves garlic, grated
- 2 tbsp flour
- 1 tbsp smoked paprika
Instructions
- Soak both types of beans in water for at least 6 hours. Drain and boil in fresh water for about 20 minutes until softened. Drain again.
- In a large pot, heat oil over medium heat and brown the chopped sausage for about 5 minutes. Remove and set aside.
- Add oil or butter to the same pot and sauté onions and carrots with salt until soft (about 5 minutes).
- Return sausage to the pot with beans, add approximately 4 liters of water, bay leaf, and any optional meat if desired. Cook on medium heat for about 40-45 minutes, stirring occasionally.
- In a separate pan, melt oil or butter over medium heat, add grated garlic, cook briefly, then stir in flour and smoked paprika. Combine this thickener into the simmering soup while stirring well.
- Simmer for another 5 minutes until thickened. Taste and adjust seasoning before serving hot.
