  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • About ¼ lb deli chicken
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce
  • Cooked pasta or zucchini noodles, if desired

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat olive oil over medium heat. Sauté onion and red bell pepper for about 5 minutes until softened; add garlic and cook until fragrant.
  3. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, pepper, parsley, and the cooled vegetable mixture. Mix until just combined.
  4. Lay out parchment paper and form the meat mixture into an 8"x15" rectangle.
  5. Layer deli chicken over the meat mixture, add basil leaves and mozzarella cheese while leaving a border around the edges.
  6. Roll up the meatloaf using parchment paper to assist; seal the ends.
  7. Place on a lined baking sheet and bake for about one hour or until cooked through.
  8. Let rest for 10 minutes before slicing and serving.
