Description

Savory Beef Stifado is a traditional Greek beef stew that transforms simple ingredients into a delightful culinary experience. With tender chunks of beef simmered in a rich tomato sauce infused with aromatic spices and sweet pearl onions, this dish embodies comfort food at its finest. Perfect for family dinners or cozy gatherings, it offers a warm and satisfying meal that can be easily adapted to suit your taste. Serve it over fluffy rice or with slices of crusty bread to soak up the delicious sauce.

Ingredients

Scale
  • 2 pounds beef (chuck or brisket)
  • 3 tablespoons olive oil
  • 16 ounces small pearl onions
  • 4 cloves garlic
  • 1 cup red apple vinegar
  • 28 ounces crushed tomatoes
  • 1 stick cinnamon (optional)
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the ingredients by chopping the beef, mincing the garlic, and peeling the pearl onions.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sear the beef in batches until browned on all sides. Remove and set aside.
  3. In the same pot, sauté pearl onions and garlic until golden brown.
  4. Deglaze the pot with red apple vinegar, scraping up any browned bits.
  5. Return the beef to the pot, then add crushed tomatoes, cinnamon stick, bay leaves, oregano, honey, salt, and pepper. Stir well.
  6. Bring to a gentle boil, cover, reduce heat to low, and simmer for about 120 minutes until beef is tender.
  7. Discard bay leaves and cinnamon stick before serving. Garnish with fresh parsley.
