  • 2 cups dry sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 1 1/2 lb salmon fillet
  • Salt & pepper to taste
  • 1/2 tsp garlic powder
  • 8 oz imitation crab meat (chopped)
  • 1/2 cup Japanese mayonnaise
  • 4 oz cream cheese (softened)
  • 1 Tbsp sriracha
  • 1 Tbsp low sodium soy sauce
  • 2 Tbsp furikake
  • Spicy mayo (mayo + sriracha + lime juice)
  • Green onion (chopped)
  • Black and white sesame seeds
  • Roasted seaweed
  • English cucumber (sliced)
  • Avocado slices

Instructions

  1. Rinse sushi rice under cold water using a fine-mesh sieve for about a minute. Cook in a rice cooker with 2 cups of water. Once cooked, transfer to a baking sheet and mix with seasoned rice vinegar.
  2. Preheat the oven to 400°F. Season salmon with salt, pepper, and garlic powder; bake for 15-20 minutes until cooked through.
  3. Flake the cooled salmon into a bowl and mix with imitation crab meat, Japanese mayonnaise, cream cheese, sriracha, and low sodium soy sauce.
  4. Spread cooled sushi rice in a baking dish; layer furikake on top followed by the salmon mixture. Broil for about 4 minutes until slightly browned.
  5. Garnish with spicy mayo and serve with roasted seaweed and sliced vegetables.
