  • 2 cups shredded coconut (sweetened or unsweetened)
  • 23 drops pink food coloring
  • 1 tbsp milk (to moisten coconut if needed)

Instructions

  1. Preheat the oven to 175°C (350°F) and grease a 9×13-inch baking pan.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with buttermilk and stir in hot water until smooth.
  5. Pour batter into the prepared pan and bake for 25–30 minutes until a toothpick comes out clean. Allow cooling completely.
  6. For the topping, beat heavy whipping cream with powdered sugar and vanilla until fluffy. Mix in shredded coconut colored with pink food dye.
  7. Frost the cooled cake with the whipped mixture and sprinkle the pink coconut on top.
  8. Chill for at least an hour before slicing into squares.
