  • 1/2 lb lean ground beef
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F. Halve the spaghetti squash lengthwise; remove seeds.
  2. Place squash halves in a baking dish and bake for 50-60 minutes until fork-tender. Cool for 10 minutes, then shred into strands.
  3. In a skillet over medium heat, cook ground beef until browned (7-10 minutes). Drain excess grease; add marinara sauce and simmer for 2-3 minutes.
  4. In a mixing bowl, combine ricotta cheese, Italian seasoning, salt, pepper, Parmesan, and 1 cup mozzarella.
  5. Assemble by layering half of the marinara sauce over shredded squash, adding ricotta mixture on top, followed by remaining marinara and mozzarella.
