  • ⅓ cup black olives (Kalamata)
  • ⅓ cup green olives
  • ¼ cup fresh parsley
  • ¼ cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Blanch the cauliflower florets in boiling water for 1-2 minutes until tender-crisp. Transfer to an ice bath immediately to stop cooking.
  2. In a large mixing bowl, combine blanched cauliflower with halved cherry tomatoes, thinly sliced red onions, olives, and chopped parsley.
  3. For the dressing, whisk together olive oil, red apple vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes in a small bowl.
  4. Pour the dressing over the salad mixture and toss well to coat all ingredients evenly. Refrigerate for at least 30 minutes before serving.
