- 5–6 organic sundried tomatoes
- 1 Tbsp tomato paste, organic
- 1 1/2 cups organic heavy cream
- 3 Tbsps cooking apple vinegar (or sub with chicken stock)
- 1/2 lemon, freshly-squeezed
- 1 cup chopped organic kale (frozen or fresh)
- 1–2 cups tomatoes (optional; consider using roasted herb tomatoes)
- 1 Homemade Texas Toast Garlic Bread
Instructions
- Start by heating the olive oil and butter in a large pot over medium heat. Add the minced garlic and sauté until fragrant.
- Add in the shredded chicken along with the chicken stock. Stir in the flour gradually while mixing well to prevent lumps.
- Incorporate the Tuscan Marry Me blend, sea salt, sundried tomatoes, and tomato paste into the mixture. Allow it to simmer for about 5 minutes until it thickens slightly.
- Pour in the heavy cream and apple vinegar (or chicken stock if using). Stir well. Squeeze half a lemon into the pot for added brightness.
- Add potato gnocchi into the boiling soup along with kale. Cook according to package instructions until gnocchi floats to the top.
