Ingredients

Scale
  • 1 head green cabbage (cut into 8 wedges with core intact)
  • 3 tbsps olive oil
  • 2 tbsps butter
  • ½ cup finely diced red onion
  • 4 cloves garlic (minced)
  • 1 cup low-sodium chicken broth (or vegetable broth)
  • 4 oz. full-fat cream cheese (softened and cubed)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes in oil (julienned)
  • 1 tsp dried oregano leaves
  • 1 tsp dried thyme leaves
  • ½ tsp dried rosemary leaves
  • 1 tsp table salt
  • ½ tsp black pepper
  • 1 tsp red pepper flakes (optional)
  • ½ cup grated Parmesan cheese
  • Chopped fresh parsley (for garnish)
  • Extra Parmesan for serving (to taste)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut cabbage into 8 wedges while keeping the core intact.
  3. In a cast iron skillet, heat olive oil over medium-high heat. Sear each wedge for 2–3 minutes on each side until golden brown. Season with salt and pepper.
  4. Reduce heat to medium and add butter along with diced onion; cook until softened. Add minced garlic and sauté.
  5. Deglaze the pan with chicken broth, scraping up any browned bits.
  6. Stir in cream cheese until melted, then mix in heavy cream, sun-dried tomatoes, herbs, salt, pepper, and red pepper flakes; simmer for 2–3 minutes.
  7. Incorporate grated Parmesan until melted; nestle cabbage wedges back in the skillet.
  8. Cover and bake for 45 minutes, then uncover and bake for an additional 15–20 minutes until tender.
