Instructions

  1. In a medium bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5 minutes until frothy.
  2. In a large bowl, mix all-purpose flour and salt. Add the yeast mixture and olive oil; stir until a dough forms.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it with a kitchen towel, and let it rise in a warm area for about 1 to 1.5 hours or until doubled in size.
  5. While the dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a small bowl.
  6. Preheat your oven to 475°F (245°C) with your baking sheet or pizza stone inside.
  7. Punch down the risen dough and roll it out into a thin round shape (approximately 12 inches).
  8. Transfer the rolled-out dough onto parchment paper or a pizza peel; spread the cheese mixture evenly over it.
  9. Sprinkle fresh thyme on top and carefully slide it onto the preheated baking surface.
  10. Bake for 10–12 minutes until golden brown and bubbly. Drizzle with olive oil and honey before serving.
