- 1/2 teaspoon finely grated lemon zest
- 1–2 tablespoons milk or half and half

Instructions
- Preheat your oven to 350°F (175°C).
- In one bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix coconut yogurt, sugar, eggs, lemon zest, lemon juice, melted coconut oil, and almond extract using an electric mixer until smooth.
- Gradually combine the dry ingredients with the wet mixture using a rubber spatula until just combined.
- Fold in shredded coconut.
- Pour the batter into a greased loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
- While cooling, prepare frosting by mixing cream cheese and butter until creamy. Gradually add powdered sugar, almond extract, lemon zest, and milk to achieve desired consistency.
- Once cooled completely, frost the cake and garnish with additional coconut and lemon zest.
