  • 2 large honey crisp apples, peeled and diced small
  • 3 tablespoons salted butter
  • 2 tablespoons fruit juice or vinegar
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 2/3 cup brown sugar
  • 18 oz fresh blackberries
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup raw or turbinado sugar (for sprinkling)

Instructions

  1. Prepare the crust by mixing flour, sugar, salt, and cold butter until crumbly. Add ice water gradually until dough forms. Chill for at least one hour.
  2. For the apple filling, sauté diced apples in butter with fruit juice, vanilla, cinnamon, and brown sugar until syrupy. Cool.
  3. Roast blackberries with sugar and vanilla until thickened; cool.
  4. Roll out chilled dough and cut into pumpkin shapes. Assemble hand pies with fillings and seal edges.
  5. Bake at 375°F for about 25 minutes until golden brown.
