  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder
  • 1 small yellow onion thinly sliced
  • 3 cups bite-size broccoli florets
  • 1 zucchini thinly sliced and cut into half-moons
  • 1 small yellow bell pepper cut into 1-inch chunks
  • 1 small red bell pepper cut into 1-inch chunks
  • ¼ cup low sodium chicken broth (or apple juice/vinegar)
  • Chopped fresh parsley for garnish

Instructions

  1. Cut chicken into 1-inch pieces; season with salt and pepper.
  2. Mix garlic powder, onion powder, thyme, rosemary, paprika, and chili powder in a bowl; sprinkle half over the chicken.
  3. Coat chicken with olive oil; cook in a skillet for 6-8 minutes until browned.
  4. Sauté onions for 2 minutes; add broccoli, zucchini, yellow and red peppers. Cook for another 4-6 minutes until vegetables are crisp-tender.
  5. Add remaining seasoning and broth; combine all ingredients in the skillet for an additional minute.
  6. Garnish with chopped parsley before serving.
