- 1 3/4 lb boneless, skinless chicken breast (cubed)
- 3 cups fresh cubed pineapple
- 1 1/2 large green peppers (diced)

- 1/3 cup ketchup
- 1/3 cup packed dark brown sugar
- 1/3 cup low-sodium soy sauce
- 1/4 cup canned pineapple juice
- 4 Tbsp olive oil (divided, plus more for brushing grill)
- 1 1/2 Tbsp rice vinegar
- 4 garlic cloves (minced)
- 1 Tbsp minced ginger
- 1/2 tsp sesame oil
- Salt and freshly ground black pepper
Instructions
- In a mixing bowl, whisk together the marinade ingredients: ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 tbsp), rice vinegar, garlic, ginger, sesame oil. Season with salt and pepper.
- Place the cubed chicken in a resealable bag; reserve 1/2 cup marinade for basting. Pour remaining marinade over the chicken and refrigerate for at least one hour.
- Preheat the grill to medium heat (400°F). Drizzle olive oil over the diced onion and peppers; season with salt and pepper.
- Thread marinated chicken cubes, pineapple chunks, and vegetables onto skewers.
- Grill for about 10 minutes total; baste with reserved marinade halfway through cooking until the chicken reaches an internal temperature of 165°F.
