  • 5 cloves garlic (minced)

  • 2 tablespoons freshly squeezed lime juice (or more)
  • 4 tablespoons butter (divided)
  • 1/2 cup fresh cilantro (chopped)

Instructions

  1. Slice the zucchini and chicken breasts, then mince the garlic.
  2. Heat olive oil in a skillet over medium heat. Once hot, add the chicken and season with salt, pepper, smoked paprika, and chili powder. Cook for 5-7 minutes until golden brown; remove from the pan.
  3. In the same skillet, add garlic and sauté until fragrant. Stir in zucchini and corn; cook for another 5 minutes.
  4. Return the chicken to the skillet; add lime juice and half of the butter. Stir gently until combined.
  5. Add remaining butter to melt through; top with chopped cilantro before serving.
