Ingredients

Scale
  • 4 red onions, sliced thin
  • 4 tablespoons salted butter
  • 46 slices hearty white bread
  • 3 cups shredded Gruyere cheese
  • 1 teaspoon sugar
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1/3 cup apple juice or apple vinegar
  • 1 can beef broth (14.5 oz can)
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper

Instructions

  1. Caramelize the onions in a Dutch oven with butter and sugar over medium heat for about 35 minutes until golden brown.
  2. In the same pot, create the dipping broth by whisking together butter, flour, apple juice (or vinegar), beef broth, thyme, and pepper until thickened.
  3. Butter both sides of bread slices and heat in a skillet. Add cheese and caramelized onions between two slices to make sandwiches.
  4. Cook until the bread is golden and the cheese melts completely. Serve hot with dipping broth.
