Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a mixing bowl, combine ground chicken, Parmesan cheese, almond meal, parsley, chopped onion, egg, minced garlic, salt, and pepper until well mixed.
- Form mixture into 1½-inch meatballs and place on the prepared baking sheet. Bake for 15-20 minutes until they reach an internal temperature of 165°F.
- In a skillet over medium heat, heat olive oil and butter; add sliced onions and cook until soft and golden brown (about 25 minutes). Stir frequently.
- Add minced garlic to the skillet and cook for another minute; then pour in beef broth along with thyme, onion powder, salt, and pepper. Simmer for about 5 minutes until slightly thickened.
- Combine baked meatballs with the onion mixture in the skillet for about 5 minutes to absorb flavors; then top with shredded cheeses and cover until melted.
