Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened (about 5 minutes).
  2. Stir in garlic, bay leaves, thyme, rosemary, salt, and pepper. Add lentils and tomato paste; pour in vegetable broth and bring to a boil.
  3. Lower the heat and cover the pot; simmer for 30-45 minutes until lentils are tender.
  4. Preheat oven to 400°F (200°C). Brush both sides of bread slices with olive oil and bake on a baking sheet until golden brown (about 5-7 minutes).
