  • 1 ½ cups fresh spinach, chopped

Instructions

  1. In a large pot over medium-high heat, cook the crumbled chicken or turkey sausage until brown. Transfer to a plate and leave two tablespoons of fat in the pot.
  2. Add onions, carrots, celery, and bell pepper to the pot; sauté for about 5-7 minutes until softened. Stir in garlic, Italian seasoning, salt, and pepper; cook for another minute.
  3. Return the sausage to the pot along with chicken broth and diced tomatoes. Bring to a boil then lower heat to simmer for about 10-15 minutes.
  4. Stir in pasta and cook for an additional 10 minutes until tender.
  5. Add spinach and cook until wilted (about 1-2 minutes).
