Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes under cold water and chop them into small bite-sized pieces.
  3. In a large bowl, toss the chopped potatoes with olive oil until evenly coated. Add ranch seasoning and mix well.
  4. Spread the seasoned potatoes on a baking sheet lined with parchment paper. Sprinkle with garlic powder, salt, and pepper.
  5. Cover with foil and bake for 20 minutes. Then remove the foil and bake for an additional 20 minutes until golden brown.
  6. Sprinkle shredded cheese over the hot potatoes and return to the oven for 1–2 minutes until melted.
