  • 4 tablespoons keto taco seasoning
  • 2 tablespoons tomato paste
  • 2 medium eggs
  • 1½ cups shredded cheese
  • ½ cup heavy whipping cream
  • 1 jalapeno (sliced, optional)

Instructions

  1. Preheat your oven to 180°C/350°F.
  2. In a large skillet over high heat, cook the diced onion, bell pepper, minced garlic, and ground beef until the meat is browned. Break the beef into bite-sized pieces as it cooks.
  3. Stir in taco seasoning and tomato paste until well combined. Transfer the mixture to a casserole pan.
  4. In a mixing bowl, whisk together eggs, heavy whipping cream, and half of the shredded cheese. Pour this mixture over the beef layer in the casserole pan and spread evenly.
  5. Top with remaining cheese and optional jalapenos.
