Ingredients
- 1 onion (diced)
- 1 bell pepper (diced)
- 2 cloves garlic (minced)
- 2 lb ground beef
- 4 tablespoons keto taco seasoning
- 2 tablespoons tomato paste
- 2 medium eggs
- 1½ cups shredded cheese
- ½ cup heavy whipping cream
- 1 jalapeno (sliced, optional)
Instructions
- Preheat your oven to 180°C/350°F.
- In a large skillet over high heat, cook the diced onion, bell pepper, minced garlic, and ground beef until the meat is browned. Break the beef into bite-sized pieces as it cooks.
- Stir in taco seasoning and tomato paste until well combined. Transfer the mixture to a casserole pan.
- In a mixing bowl, whisk together eggs, heavy whipping cream, and half of the shredded cheese. Pour this mixture over the beef layer in the casserole pan and spread evenly.
