  • 1 (14.5-ounce) can diced tomatoes
  • 2 pounds boneless skinless chicken thighs
  • 8 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/3 cup finely chopped cilantro (optional)
  • Naan (warmed, for serving)
  • Cooked rice (for serving)

Instructions

  1. Heat coconut oil in a large nonstick pan over medium-high heat. Sauté diced onion, garlic, and ginger until golden brown.
  2. Stir in spices and cook until fragrant. Add diced tomatoes and scrape any bits from the pan.
  3. Transfer the mixture to your slow cooker and add chicken thighs; stir to coat.
  4. Cook on high for 2.5–4 hours or low for 4–6 hours until the chicken reaches an internal temperature of 165°F.
  5. Remove chicken and chop into bite-sized pieces. Blend the sauce until smooth.
  6. Return blended sauce to the slow cooker along with chopped chicken and mix in butter and heavy cream.
