  • 1 lb sirloin or ribeye steak, sliced into strips
  • 1 tbsp olive oil
  • 20 oz cheese tortellini (refrigerated or frozen)
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup Velveeta, cubed
  • 1/4 cup grated Parmesan

Instructions

  1. Cook the tortellini according to package directions; drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and season the steak with Cajun seasoning, smoked paprika, salt, and pepper. Sear for 2–3 minutes on each side until browned. Remove from skillet.
  3. In the same skillet, lower the heat to medium and melt butter. Sauté minced garlic until fragrant (about 1 minute). Stir in heavy cream and milk, warming for 1–2 minutes.
  4. Add cheddar cheese, Velveeta cubes, and Parmesan to the sauce, stirring gently until melted and thickened.
  5. Toss cooked tortellini into the sauce to coat thoroughly before adding back the steak. Serve garnished with chopped parsley.
