  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • pinch of salt
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 23 cups fresh mixed greens

Instructions

  1. Combine all dressing ingredients in a mason jar.
  2. Use an immersion blender to mix until smooth and creamy.
  3. Heat your grill to medium-high heat ensuring the grates are clean.
  4. Lightly brush the pineapple slices with olive oil.
  5. Sear each slice of pineapple over direct heat for about 2 minutes on each side.
  6. Cook the corn on the cob directly on the grill for approximately 5 minutes per side until slightly charred.
  7. Once grilled, remove both the pineapple and corn from heat. Allow them to cool slightly before handling.
  8. Cut off charred kernels from the corn cob once cooled.
  9. In two salad bowls, place mixed greens as a base.
  10. Add 2 slices of grilled pineapple along with equal portions of corn kernels, pepitas, blueberries, and avocado in each bowl.
  11. Drizzle your desired amount of creamy citrus dressing over each salad bowl.
