  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium red onion, thinly sliced
  • 4 tbsp butter
  • 1 lb linguine pasta
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/4 cup grated Romano cheese
  • 1/4 tsp red pepper flakes (optional, for extra heat)
  • Salt and black pepper to taste
  • 2 tbsp chopped sun-dried tomatoes, oil-packed, drained
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil

Instructions

  1. 1. Cook linguine in salted boiling water according to package instructions; reserve ½ cup pasta water before draining.
  2. 2. Season chicken with Cajun seasoning. Sauté in olive oil over medium heat until cooked through (5-7 minutes). Remove and set aside.
  3. 3. In the same skillet, sauté sliced bell peppers and onion until soft (3-5 minutes), then add minced garlic and cook for another minute.
  4. 4. Pour in chicken broth and simmer briefly.
  5. 5. In a separate pan, melt butter over low heat, add garlic, then stir in heavy cream and cheeses until smooth.
