  • 1.5 quarts cookies and cream ice cream, softened
  • 2 cups whipped cream for frosting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy. Mix in the vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mix to the creamed mixture alternately with milk until just combined. Fold in chopped Oreo cookies.
  4. Divide the batter equally between the prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool for about 10 minutes before transferring to wire racks.
  5. Assemble by placing one layer on a serving platter and spreading softened cookies and cream ice cream over it, then top with the second layer of cake.
  6. Frost the top with whipped cream and garnish with additional chopped Oreos. Freeze for at least 4 hours before serving.
