  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil
  • 3/4 cup packed light brown sugar
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips

Instructions

  3. In a large bowl, combine the eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gradually mix in the dry ingredients until just combined. Gently fold in the shredded zucchini and three-quarters of the chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out mostly clean.
