  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with water

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and set aside.
  2. In a wok or large skillet over medium-high heat, heat vegetable oil. Add sliced chicken and stir-fry until golden brown (5-7 minutes).
  3. Add bell peppers, broccoli, and carrot. Stir-fry another 3-4 minutes until veggies are tender-crisp.
  4. In a bowl, mix soy sauce, honey, rice vinegar, garlic, ginger, and the cornstarch mixture. Pour over chicken and veggies in the wok.
  5. Stir until everything is well coated and cook for an additional 2-3 minutes until the sauce thickens slightly.
