  • 1/4 cup Simply Nature Organic Whole Milk

Instructions

  1. In a Dutch oven over medium heat, melt butter and sauté diced carrots, celery, and onion until soft (about 5 minutes). Season with salt and pepper.
  2. Add flour, stirring for 1-2 minutes until browned. Gradually pour in chicken broth, scraping the pot’s bottom for flavor.
  3. Mix in pumpkin puree, garlic, cumin, and pumpkin pie spice; bring to a boil then reduce to a gentle simmer.
  4. Season chicken breasts and add them to the pot; cover and simmer for 10-15 minutes until cooked through.
  5. While chicken simmers, prepare dumpling dough by mixing flour, baking powder, spices, grated butter, egg, pumpkin puree, and milk.
  6. Shred cooked chicken and return it to the pot along with butternut squash/sweet potatoes and whole milk.
  7. Drop tablespoon-sized dumplings into the soup; cover and simmer for 8-10 minutes until puffy.
  8. Squeeze lemon juice before serving.
