  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 jars maraschino cherries
  • 1 cup powdered sugar
  • 1 tablespoon melted butter
  • 2 tablespoons maraschino cherry juice

Instructions

  1. Preheat the oven to 350°F. Grease a 9"x5" loaf pan.
  2. In a medium bowl, combine sugar, milk, oil, egg, and almond extract.
  3. In another bowl, mix flour, baking powder, baking soda, and salt.
  4. Combine wet and dry ingredients until just mixed.
  5. Drain and chop maraschino cherries; fold into the batter.
  6. Pour into the loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. For the glaze, whisk together powdered sugar, melted butter, cherry juice, and almond extract until smooth.
  8. Once cooled completely, spread the glaze over the bread.
