Ingredients

  • 1 stalk of celery
  • 1 green onion
  • 4 tablespoons mayonnaise
  • 2 tablespoons Creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. Boil the eggs in a pot of cold water until a rolling boil is reached. Cover and let sit off heat for 11 minutes.
  2. Transfer the eggs to an ice bath to cool. Once cooled, peel and halve them lengthwise.
  3. Scoop out the yolks into a bowl and mix them with finely chopped celery, sliced green onion, mayonnaise, Creole mustard, Cajun seasoning, and hot sauce until smooth.
  4. Fill each egg white half with the yolk mixture using a spoon or piping bag.
  5. Serve chilled, garnished with additional green onions or paprika if desired.
