- 12 eggs
- 1 stalk of celery
- 1 green onion
- 4 tablespoons mayonnaise
- 2 tablespoons Creole mustard
- ¼ teaspoon Cajun seasoning

Instructions
- Boil the eggs in a pot of cold water until a rolling boil is reached. Cover and let sit off heat for 11 minutes.
- Transfer the eggs to an ice bath to cool. Once cooled, peel and halve them lengthwise.
- Scoop out the yolks into a bowl and mix them with finely chopped celery, sliced green onion, mayonnaise, Creole mustard, Cajun seasoning, and hot sauce until smooth.
- Fill each egg white half with the yolk mixture using a spoon or piping bag.
- Serve chilled, garnished with additional green onions or paprika if desired.
