  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat grill to medium-high heat. Season the chicken or steak with chili powder, cumin, salt, and pepper. Grill for 2-3 minutes per side until cooked through.
  2. In a bowl, combine diced tomatoes, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper for pico de gallo; toss well.
  3. For the chipotle aioli, whisk together mayonnaise, chipotle pepper in adobo sauce, garlic, lime juice, salt, and pepper until smooth.
