  • 3 large sweet potatoes
  • ½ cup cooked and crumbled turkey bacon
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • Salt and pepper to taste
  • Minced scallion for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prick each sweet potato several times with a fork. Coat lightly with canola oil and sprinkle with salt.
  3. Bake the sweet potatoes for 60-90 minutes until fork-tender.
  4. Halve the baked sweet potatoes lengthwise and scoop out the flesh into a mixing bowl.
  5. Mix in the turkey bacon, butter, and cheese until combined.
  6. Fill each potato skin with the mixture and create a well for an egg.
  7. Crack an egg into each well; season with salt and pepper.
  8. Return to the oven and bake for 15-20 minutes until the egg is set.
