  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 2 eggs
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan with parchment paper.
  2. In a bowl, combine flour, baking powder, salt, brown sugar, and white sugar. Mix in cold butter until crumbly.
  3. Add eggs and vanilla; mix until combined.
  4. Press two-thirds of the mixture into the prepared pan for the crust.
  5. In another bowl, blend mascarpone, cream cheese, caster sugar, corn starch, and eggs until smooth; layer half of the mixture over the crust followed by blueberries and remaining filling.
  6. Bake for 65-75 minutes or until golden brown and a toothpick comes out clean.
