  • 3 cups quick oats
  • 1 cup quartered blackberries

Instructions

  1. Preheat your oven to 325°F (160°C). Cream together the softened butter, light brown sugar, and white sugar until smooth. Beat in eggs and vanilla until fully incorporated.
  2. In another bowl, mix together 1 ¼ cups flour, baking soda, and salt. Gradually add this mixture to the creamed butter mixture until just combined. Fold in oats and white chocolate chips.
  3. Coat the quartered blackberries with the remaining 2 TBSP flour to prevent color bleeding. Gently fold the floured blackberries into the dough.
  4. Use a cookie scoop to drop rounded portions onto a greased baking sheet. Bake for about 12-13 minutes until edges are lightly golden.
  5. Allow cookies to cool for about 5-7 minutes on the baking sheet before transferring them to a wire rack.
