Ingredients
Scale
- 1 cup softened butter
- 1 cup packed light brown sugar
- ½ cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 ¼ cups flour + 2 TBSP flour (divided)
- ½ tsp baking soda
- 1 tsp salt
- 3 cups quick oats
- 1 cup quartered blackberries
Instructions
- Preheat your oven to 325°F (160°C). Cream together the softened butter, light brown sugar, and white sugar until smooth. Beat in eggs and vanilla until fully incorporated.
- In another bowl, mix together 1 ¼ cups flour, baking soda, and salt. Gradually add this mixture to the creamed butter mixture until just combined. Fold in oats and white chocolate chips.
- Coat the quartered blackberries with the remaining 2 TBSP flour to prevent color bleeding. Gently fold the floured blackberries into the dough.
- Use a cookie scoop to drop rounded portions onto a greased baking sheet. Bake for about 12-13 minutes until edges are lightly golden.
- Allow cookies to cool for about 5-7 minutes on the baking sheet before transferring them to a wire rack.
