  • 2 tablespoons vegetable oil, divided

Instructions

  1. In a mixing bowl, coat thinly sliced chicken breasts with cornstarch, salt, and black pepper.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Stir-fry the chicken until browned (4-5 minutes), then remove from the skillet.
  3. In the same skillet, add another tablespoon of oil and stir-fry sliced onion and bell pepper for 2-3 minutes. Add mushrooms and minced garlic; cook until softened (2-3 minutes).
  4. In a separate bowl, whisk together soy sauce, mushroom sauce, honey, rice vinegar, and black pepper to create the sauce.
  5. Return the chicken to the skillet along with the prepared sauce. Toss everything together until well-coated and heated through (1-2 minutes).
