  • 4 ounces provolone cheese (cubed)
  • 4 ounces sharp cheddar cheese (cut into small cubes)
  • 6 slices thick-cut turkey bacon (cooked and crumbled)
  • 1 cup Panko breadcrumbs
  • 1 large egg
  • 3 large eggs (lightly beaten)
  • ¼ cup freshly chopped parsley
  • 8 tablespoons unsalted butter
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons whole milk
  • Vegetable oil (for frying)

Instructions

  1. Boil the peeled and cubed Russet potatoes in a large pot until fork-tender. Drain well and allow to cool slightly.
  2. Mash the potatoes until smooth using a potato masher or ricer.
  3. In a mixing bowl, combine mashed potatoes with provolone cheese, sharp cheddar cheese, turkey bacon, parsley, garlic powder, milk, sea salt, black pepper, and one beaten egg. Mix well.
  4. Scoop portions of the mixture into small balls or oval shapes.
  5. Set up a breading station with flour in one dish, beaten eggs in another dish, and Panko breadcrumbs in a third dish. Coat each croquette in flour first, then dip into egg wash followed by rolling in Panko breadcrumbs.
  6. Heat vegetable oil in a frying pan over medium heat. Fry croquettes in batches until golden brown on all sides—about 4–5 minutes per side.
