  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, and salt.
  3. In a large bowl, beat unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture; mix gently until just combined.
  6. Fold in finely chopped apples.
  7. In a separate bowl, combine granulated sugar and cinnamon for rolling.
  8. Roll tablespoon-sized portions of dough into balls; coat each ball in the cinnamon-sugar mixture.
  9. Place dough balls on the prepared baking sheet about 2 inches apart.
