- ¾ cup granulated sugar (for coating)
- 2 teaspoons ground cinnamon (for coating)
- 1 cup powdered sugar (for glaze)
- ½ teaspoon vanilla extract (for glaze)
- 1 – 2 tablespoons apple cider (not reduced, for glaze)
Instructions
- Heat apple cider in a saucepan until it reduces to ¼ cup. Cool to room temperature.
- Brown the butter in another saucepan over low heat; let cool before using.
- Mix flour, baking powder, baking soda, cornstarch, spices, and salt together.
- Combine cooled butter with sugars; whisk in egg, egg yolk, reduced cider, and vanilla.
- Add dry ingredients gradually until just combined; preheat oven to 375°F (190°C).
- Scoop dough onto prepared baking sheet and bake for 9-11 minutes.
- Cool on the rack, then coat with melted butter and cinnamon sugar.
